EvenStar Shochu is made using 100% pearled barley from eastern Washington and imported Koji spores from Japan following the general brewing process of Japanese sake, a proprietary barley/koji mix undergoes a lengthy double fermentation at cool temperatures.

The resulting sweet mash is hand loaded into a copper pot still with whole fresh rosemary then distilled a single time. This distillate rests for weeks ex-red wine casks before being blended to an alcohol strength of 25% alc./vol.

Appearance:

Crystal clear.

Aroma:

Rosemary and lavender with pear drops, custard cream sweets and vegetal notes.

Taste:

Very silky and rounded. Leathery and earthy rosemary with lavender.

Aftertaste:

Dry, earthy and herbal finish with floral notes and white pepper spice.
