This is a ‘true’ amontillado – it started off as fino but during the ageing process the protective flor died exposing the sherry to oxygen. This caused the colour and style to change, contributing a more nutty character.

Clear, deep golden amber.
Prune, boat varnish, tobacco, toasted almond, baked pear and faint clove.
Nutty, varnished wood and green olives with herbal and fruit complexity. Dry woodiness, salt and acidity balances light honey.
Grassy, green olives and elegant wood.
A bone dry and superbly complex amontillado with green olive and nutty flavours.
