Released in February 2017, this “All Seasons” gin follows Glendalough’s four seasonal gins – each made with locally foraged fresh botanicals reflecting the change in seasonally available leaves, flowers, fruits and seeds.
As with the four seasonal gins, forager Geraldine Kavanagh created the botanical recipe to reflect what’s available locally in County Wicklow, Ireland. A base of classic gin botanicals are used alongside the locally foraged botanicals. These are added to the still within hours of being picked where they are infused in neutral spirit overnight before distillation the following day. Master distiller, Rowdy Rooney then operates the Holstein still in a classic London dry manor with no additional flavours added after distillation. Each batch is less than 250 litres. The distillate is diluted to the 41% alc./vol. bottling strength using Wicklow mountain water.
The 23 botanicals: juniper, coriander, angelica root, orris root, liquorice root, liquorice bark, fresh organic lemons, elderflower, red clover flower, yarrow, ox, eye daisy, wild raspberry, blackberry leaves, wild rose, watermint, sweet woodruff, wild angelica, lemon balm, sweet cicely, lady’s bedstraw, bell heather.

Crystal clear.
Fresh resinous pine, citrus and eucalyptus freshness with green apple, forest ferns, spearmint and chalky minerality.
Pine fresh juniper, enlivening black pepper spice and zesty citrus. Faint rounding cashew nuttiness.
Lemongrass and piney juniper with peppery spice.
