Botanicals including coriander, caraway, rosemary, cardamom, juniper and cassia are distilled using vapor infusion in a pot still to produce a base gin spirit. This is blended with distillates of citrus and fig which are individually distilled at room temperature using low pressure distillation.

Appearance

Crystal clear.

Aroma

Pungent spirituous black pepper and coriander spice, herbal, piney juniper, zesty citrus and lemon grass, with musky, nutty angelica root. A splash of water releases herbal complexity.

Taste

Zesty citrus – particularly mandarin, bold spirituous peppery spice and pleasing fresh freshening piney juniper and lifted by complex herbal notes – particularly thyme and rosemary. Herbal notes are amplified/released when water or tonic is added.

Aftertaste

Lingering herbal notes in the long finish.

Overall

A gutsy gin to please naval types with an accompanying firepower of 57% alc./vol.. “Batten down the hatches” and prepare for a storm with a G&T that has plenty of spice, citrus, cucumber and herbal complexity.
