A liqueur inspired by Virgilio Pallini Sr's love of white peaches. His wife used to preserve them in alcohol so they could enjoy them regardless of season. She used the peach infused alcohol as a base for a liqueur to which she added fresh peach juice and served mixed with sparkling wine.

Appearance:

Clear, amber yellow.

Aroma:

Pungent peach jam, fresh peach skin and citrus.

Taste:

Cooked peach, peach jam and fresh peach with tart citric acidity.

Aftertaste:

Long cooked peach finish with lingering acidity.

Overall:

Perhaps best described as a sour peach liqueur due to the citrus acidity which balances rich cooked peach notes.
