A classically styled Honjozo sake made from Gohyakumangoku rice from Hyogo prefecture using rice milled to 60% (40% removed).

Review and Tasting


Sampled on 29/04/2021

Appearance:

Crystal clear.

Aroma:

Bready and malty, with fresh melon and overripe pear. Faint seaweed and soy sauce.

Taste:

Very faintly salty, yeasty green apple with clay-like mineral complexity, delicate passion fruit and faint zesty lime. Attractive creamy mouthfeel. (Very faint metallic note but in an attractive way.)

Aftertaste:

Tart pear, faint smoked salmon with green apple and fermenting acidity, sweet tropical fruit and light zesty lime citrus. Very faint saltiness.

Overall:

Complex, characterful, well-balanced and very affordable. Good to sip and great in a cocktail.
