'Genshu' means natural strength and this sake comes from the same tank as Akashi-Tai's Honjozo but this undiluted version has a much fuller palate. Made from Gohyakumangoku rice from Hyōgo Prefecture polished to 60% (40% removed).

Pronounced 'Ack-Ash-Ee-Tie Hon-Joe-Zo Gen-Shoe'.

Appearance:

Clear, very faint straw-green hue.

Aroma:

Beeswax, white flower petals and fermenting green apple with faintly salty mussels, soy sauce and pine wood.

Taste:

Mineral with crisp acidity, green apple, pear, and red grape, delicate and attractive spirituous spice, beeswax and faint sea salt.

Aftertaste:

Fresh slightly acidic crisp finish.

Overall:

Characterful with faint saltiness, yeasty acidity and delicate spiritous spice balancing apple and pear fruit with flower blossom.
