Overseen by expert winemaker, Marzio Pol, Fiol Extra Dry Prosecco is made from 100% 100% Glera grapes harvested in the province of Treviso, the heart of the Prosecco DOC area.

The grapes are removed from their skins for the controlled 40-day fermentation at 16-18°C. Carbonation using the Charmat method takes place in an autoclave over 30 days with the wine remaining in contact with the yeast for several weeks. After bottling, Fiol Extra Dry is rested for a few months to refine prior to release.

Created by Giovanni, Gian Luca, and Pietro, three friends from Treviso who are passionate about the wines from their region of Italy, they chose the name Fiol as this Venetian word refers to someone that stands out and who knows how to appreciate life.

Appearance:

Clear, very pale golden with persistent bubbles forming a ring of foam.

Aroma:

Floral (wisteria) and lightly biscuity with faint acacia honey.

Taste:

Floral notes continue on the light, well-balanced palate with mild cleansing tart apple acidity.

Aftertaste:

Faint violate blossom flavours emerge in the dry (but not bone dry) finish.

Overall:

Light, easy, well-balanced, and pleasingly floral, yet lacks depth.
