Based on Moscato d'Asti wine with quinine, lemon, vanilla, cloves, cinnamon and other botanicals, this is the first white chinato and is the creation of Mauro Vergano.
A botanical extract (concia) is made by macerating botanicals in sugar beet neutral spirit for 20 to 30 days in 30-litre stainless-steel vessels. After filtration, the concia is matured in oak for a few months before blending with Moscato d'Asti from Bera Vittorio & Figli. After a 7 to 10-day marrying period, the blend is filtered, fortified and bottled.
