Question for our good host: when you specify "pineapple juice" in a recipe are you indicating freshly juiced or, perhaps, allowing for bottled or tinned commercially available juice? We always use freshly juiced since pineapples are available to us year round.

Fresh is always best, but juicing pineapples is a faff. I use Eager Pineapple with delivers taste and foams well.
