While working on for recipes for the spring menu at Atchafalaya in New Orleans, I was inspired to make a Vesper riff with classic New Orleans style improvements...
Excellent cocktail. Very well balanced. Initially looked at this as I had a bottle of Cocchi Americano I needed to finish. The herbal of the Old Tom and Absinthe (I love anything with Absinthe) works well with the Cognac.
Had as an aperitif, but would work well after dinner. Would have again.
