You raise a good point, Peter. I have emailed Monin asking for confirmation of Brix levels in their Pure Cane Syrup in UK/Europe and USA.

Monin replied, saying the Brix is 65.1 with 85.6g of sugar per 100ml.

Hi there. I've been going over this topic regarding several different brands, and I got stuck with Monin. According to their info it is, in fact, a 65.1º BRIX syrup, but they also confirm the 85.6g of sugar per 100ml. Now, I weighed 100ml of syrup and it comes up to, approximately 120g. If they claim to have 85.6g of sugar per 100ml (or 120g), that means it has 71.33g of sugar per 100g of syrup (120g of syrup has 85.6g of sugar, so 100g of syrup has X g of sugar. X=(100x85.6)/120=71.33). Wouldn't that be a 71.3ºBRIX then? I'm not the best at math, definitely, but I think my calculations are correct. So, what am I missing? I'm not saying they're misleading or fooling us, I just want to know where my process went wrong, or maybe I've got the whole BRIX scale wrong.
