I can really see why this drink won the competition. What an incredible job you have done, Louis! Unfortunately I couldn't have the pipettes of olive oil as the one I had was not extra virgin and I could not taste the sherry. But still, great and rich drink.
Update: I really appreciate your recipe, but I did reduce the agave syrup to just 5ml and I found that just that little better in terms of balance. Again, not to discredit the great job that you did.
