This was my first cocktail using Aperol Aperitivo. I didn't have that type of rum so I used a standard light white rum (only one I had) and substituted the simple syrup with 1 part chocolate liqueur, 1 part coffee liqueur and 1 part simple syrup.
Very pleased with the result! The bitterness of the aperol complements the sour from the passionfruit. And I'm sure the chocolate and coffee liqueurs are subtly adding complexity somewhere beneath the sheets.
