Having opened its doors in 2013, Four Pillars is one of Australia's founding craft gins and has arguably become the most successful of the lot, both inside the country and out. From its staple Rare Dry Gin to cult-favourite Bloody Shiraz and bartender-beloved Olive Leaf Gin, they haven't missed yet when it comes to flavour.
And if you've had the chance to visit either the Sydney Laboratory or the Healesville Distillery, you'll see Four Pillars have got the whole hospitality thing wrapped up too.
From the beginning the idea was to have a distillery that people could come and visit, sample the gins and enjoy the gorgeous surrounds of the Yarra Valley, which is about an hour's drive north-east of Melbourne, through some breathtaking countryside. And the initial 2013 build did just that, with an impressive bar built alongside the working stills, and a green courtyard for overflowing tables. Perhaps initially underestimating their own success, however, that bar saw queues out the door every weekend.
