Founded in France in 1942, Les Vergers Boiron has grown from a regional fruit merchant into one of the world's best-known producers of premium fruit purées for professional kitchens and bars. Still family-owned after more than eight decades, the company earned its reputation among pastry chefs before becoming a preferred purée brand among bartenders.
Boiron's breakthrough came in 1970 with the development of frozen fruit purées, allowing chefs to work with consistently ripe fruit regardless of season. Today, the company sources fruit from specialist growing regions worldwide, selecting varieties for their flavour over their yield. Different harvests are carefully blended to achieve a reliable flavour profile before each fruit is processed using methods tailored to preserve its natural aroma, texture and colour. While frozen purées remain a cornerstone of its range, Boiron has expanded into shelf-stable ambient purées developed specifically for bartenders. These products are designed for speed and convenience behind the bar, offering ready-to-pour fruit with no added sugar or artificial flavourings while helping reduce preparation time and fruit waste. The range is aimed at everything from cocktails and alcohol-free serves to smoothies, frappés and desserts.

Innovation has long been central to the company's philosophy. In 2019, Boiron introduced "Fruitology®", its own sensory approach to understanding fruit. Borrowing principles from sensory science, Fruitology evaluates fruit by appearance, aroma, texture, and flavour, giving chefs and bartenders a shared vocabulary for selecting ingredients and developing new recipes. The system also helps explain how different fruit varieties interact with spirits and other flavours, encouraging more thoughtful recipe development.
Boiron's products are now distributed in more than 80 countries, with a portfolio exceeding 60 flavours and over 120 product lines. The company supplies many of the world's leading bars and pastry kitchens, and its purées are used by numerous award-winning bartenders.
In recent years, Boiron has strengthened its commitment to sustainability, becoming a certified B Corp and, in 2024, adopting the French status of Société à Mission, formally embedding environmental and social objectives into its business alongside commercial performance.
