Owned and operated by the Brook Family Cape Byron Distillery sits in the heart of their 96 acre farm in the hinterland of Byron Bay, within sight of the sweeping beam of the lighthouse. Nestling in a subtropical rainforest of 35,000 trees planted by the family, both the copper pot still (named George) and the building in which it sits were purpose-built.
