Dating back to 1870, Huber's is the oldest restaurant in Portland and a trip to the city is not complete without at least one of the Flaming Spanish Coffee cocktails served at this venerable institution.
Redwood panelling rises to a vaulted ceiling with stained glass skylights overhead. The stairs and stripes hang under a painting of Huber the eponymous chef. On an adjacent wall a notice politely warns guests to "watch your language - guests using profane language will be asked to leave." Huber's is delightfully old-school.
Matthew is one of the most impressive showmen come bartenders we've had the pleasure to watch work. Gaze in awe as he makes Huber's signature Flaming Spanish Coffee - each ingredient arcing through the air as he moves while performing flamboyant pours. Ideally sit at the bar and you'll be able to watch the show as others order the house cocktail. But sit at one on the table and your drink will be flamed and made tableside.
