Quinary's name is inspired by the five senses and each drink on offer is designed to make you use them and experience the drink in the fullest capacity. The space is modern and industrial with a lab for making their own flavours and spirits.

From Tastings Group, which brought you Angel's Share (whisky), Origin (gin) and The Envoy (tea, among other things), Quinary has been widely lauded for its cocktail creativity, as well as credited with sparking a cocktail revolution in Hong Kong. The name references the five senses used to experience the drinks, which are well-done variants on this generation of molecular mixology techniques: not just airs, caviars and pearls, but slow-cooking, carbonation, ageing, redistilling and the like.

The long, dark, cool interior blends industrial influences with more old-school references for a timeless feel that's ageing well, with molecular equipment on display. Tastings Group co-owner Antonio Lai worked with Tony Conigliaro at 69 Colebrooke Row, and Conigliaro's influence is obvious, although his clear ideas are less so. An able bar team present fun, fab, great-tasting drinks with passion and enthusiasm: bring a sense of humour and try the signature Earl Grey Caviar Martini.
