Look for the black marker hieroglyphs leading to the artfully scratched door in this pedestrian street off Club Street, and follow the stairs down to a raw concrete emporium of avant-garde culinary cocktails.
The short menu changes regularly, although an omakase selection (SG$150) is always an option, and uses ingredients as diverse as kelp, sea buckthorn, genmaicha and tonka bean: an impressive selection of home-made tinctures and potions lines the back wall behind the bar.
Airs, dehydration, percolators, bell jars and the full raft of molecular mixology techniques are usually on display, while in keeping with the culinary theme, guests are greeted with an amuse-bouche. If only the banquettes were a little bit closer to the immobile concrete high tables, Operation Dagger would be a great place to settle in for the night.
