Hidden beneath Trèsind on Hanover Street in Mayfair, Tryst is an intimate 30-seat speakeasy that celebrates the diversity of India's regional flavours.
Led by Marina Juszcyk, formerly of SOMA, the drinks programme treats ingredients more commonly associated with Indian kitchens than cocktail bars as the stars of the menu.
Behind the minimalist speakeasy aesthetic is a highly technical approach to drink-making, with clarification, fermentation, milk washing, carbonation and other modern techniques. A custom Tayer Station takes centre stage, allowing guests to watch the bartenders at work.
