This Trinidadian rum was column distilled in 2000 by Angostura who aged it for nine years in ex-American whiskey casks before if being acquired by Cognac Ferraud’s and shipped to France for further aging in their ex-cognac casks.

Cognac Ferraud has long established relationships with some of the Caribbean’s best distilleries due to selling them used cognac casks for ageing rum. Thus Alexandre Gabriel, owner of Cognac Ferrand has over the years sampled many exceptional casks of rum and this led him to start buying the best examples and shipping them back to his cellars in Cognac.

These rums have been aged in their Caribbean distilleries in hot and humid conditions, generally in American ex-whisky casks. After being shipped to Cognac Ferraud’s Château de Bonbonnet the rums are transferred into casks previously used to age cognac and left in Cognac Ferraud’s cool cellars for several months to two years. The result is a range of ‘Plantation’ branded rums from around the Caribbean.

Review and Tasting

Sampled on 08/06/2011

Appearance:

Clear, bright golden yellow with coppery glint.

Aroma:

Whiff of old tobacco on a spicy, buttery nose with slight dried tropical fruit aromas.

Taste:

Has that Oil paint note I find a signature to Trinidadian rum but here masked with overripe banana and sweet orange caramel.

Aftertaste:

Slightly bitter, old tobacco returns in a slightly clumsy finish.
