Distilled from fermented fresh sugar cane juice using a continuous stainless steel column still and then aged for 100 months in ex-bourbon barrels. Charcoal filtration is used “for clarity and colour” prior to bottling.

Appearance:

Clear, very pale straw yellow.

Aroma:

Floral lavender, pastry, vanilla, praline, hazelnut and coffee with white pepper and faint cumin.

Taste:

Vanilla, white chocolate, buttery fudge and black pepper with praline and hazelnut.

Aftertaste:

Vanilla, buttery fudge and black pepper spice with floral notes.

Overall:

Vanilla and buttery fudge with white chocolate and spice.
