A good and fresh thyme branch on the top of the foam.
In the shaker:
Add the egg white, the fig syrup, the amaretto and tequila.
Hard dry shake for ~15 seconds (so as to create the foam)
Add yuzu juice and Ice to the shaker and hard wet shake for 10 seconds.
Double strain.
Serve in a freezed small OF glass, without ice
Garnish with a slapped thyme branch (to realease all the aromas)
