Launched in October 2012, Biercee Gin takes its name from its place of origin, the Biercée Distillery. The tall, square bottle is presented wrapped in a black and white diamond cardboard casing, a reference to the clothing of court jesters, mirroring the distillery’s livery.

The botanicals used to flavour this gin include: juniper, coriander, citrus, fennel, anise, poppy, cocoa, hops, clove, lavender and vanilla.

The words ‘Thesis & Antithesis’ appear boldly on the label – ‘thesis’ being an intellectual proposition and ‘antithesis’ presumably the counter-proposition to that thesis. We’re not quite sure how these terms apply to this gin, other than perhaps describing the trial of various recipes and their assessment.

Appearance:

Crystal clear.

Aroma:

Fragrant and spicy with cumin, fresh coriander and piney juniper overtones of lavender and camphor.

Taste:

Cumin spice and naan bread-like coriander sit alongside piney juniper in this spice market of a gin. Despite the spice Biercee has a soft mouthfeel but is perhaps more Indian than Bulgium in style.

Aftertaste:

Cumin spice, piney juniper and white pepper spice.
