A single distilled cachaça, distilled using sugar cane juice from two specific areas on a plantation - juice from both areas is kept separate through fermentation and distillation, then blended after distillation. The sugar cane is crushed within 24 hours of being cut down.

Fermentation is via wild yeast for 36 hours. It comes off the still - a "short, inefficient column" to quote the makers, who say they deliberately decided against a copper pot still after testing and tasting comparative distillations - at between 48 and 52%. It is lightly cold filtered before bottling.

Appearance:

Crystal clear.

Aroma:

Cooked sugar cane with the merest whiff of acetate.

Taste:

Dry but with a hint of cane sweetness and light acetate notes from the nose.

Aftertaste:

Fresh cooked sugar cane sweetness is amplified in a finish which ends which fades with a burst of old-fashioned liquorice.
