Unusually, Stauning malt a combination of rye and a small amount of malted barley in-house. This is fermented and twice distilled in traditional copper pot stills. The resulting distillate is aged in a combination of 200 litre and 50 litre new oak casks.
Due to being aged for less than three years, Stauning Young Rye cannot be described as being a whisky, although is whisky-like.

(sample distilled 2011-2013 and bottled 2015) Clear, mid golden amber.
Freshly cut pencil shavings, freshly baked rye bread with baked apple, fruitcake, cinnamon and black pepper spice.
A hefty whack of cinnamon and black pepper spiced exuberant oak camouflages rye bread, fruitcake and baked apple. Water softens and brings bready flavours to the forefront.
Dry, cinnamon and black pepper spiced finish with lingering rye bread and faint burnt raisin.
Too young to be a "whisky" this precocious rye has a huge personality, exuding cinnamon and black pepper spice. However, this is tamed with a splash of water to reveal pleasing rye bread and fruity notes.
