Made from a blend of sakes brewed some 40 years prior to bottling in May 2015, each made from 65% polished Sawanohana rice and koji.

Appearance:

Clear, deep tawny amber brown.

Aroma:

French onion soup, madeira soaked prunes and raisins.

Taste:

Prune fruit, stewed and burnt onion, molasses, chocolate and light nutmeg spice.

Aftertaste:

Burnt onion, coffee, chocolate and scorched rosemary.

Overall:

This aged sake won’t be to everybody’s taste but is fabulously complex and savoury with flavours of French onion soup, madeira, coffee, chocolate and rosemary.
