Made at Chȃteau de Sassy in Normandy, France using apples sourced from local orchards with loam and clay soils with close proximity to the nearby forest. Five varieties of traditional apples are used: Bedan, Doux Normandie, Frequin, Douce Moën, and Douce Coët Ligné.

Appearance:

(sample bottle batch 02, 2018) Clear, golden amber with lively bubbles producing a sustained ring of foam.

Aroma:

Earthy cider apple with light orange oil.

Taste:

Dry with good apple flavour with earthy tannins, flinty minerality and light acidity.

Aftertaste:

Long tart apple mouth drying finish.

Overall:

Bone dry and rustic in style with earthy tannins, flinty minerality and light acidity.
