A Junmai (without added alcohol) traditionally styled sake brewed from Yamadanishiki rice from Hyogo prefecture, polished to 60% (40% of the grain is removed).

Appearance:

Crystal clear.

Aroma:

Yeasty (still fermenting), pear, and grassy banana.

Taste:

Sweet and then slightly sour with banana, green apple, galia melon and pear.

Aftertaste:

Sweet and delicately sour fruit meets minerality with very delicate citrusy acidity.

Overall:

Funky fermenting fruit with delicate acidity balancing rich fruitiness. Characterful and well-balanced.
