Made with Pedro Ximénez grapes that have been sun-dried after picking until raisin-like. Fermentation of these grapes is halted to maintain natural sugars in the wine, which is then matured for 12 years in contact with the air in Jerez de la Frontera.
Serve at 10 -12ºC (50 - 54ºF) with rich desserts, cakes and pastries, poured over vanilla ice cream, or with strong blue cheeses.
