Garnish:

Three drops of extra virgin olive oil

How to make:

Combine all ingredients, except the olive oil, in a shaking tin and shake with ice for 15 seconds. Double strain, using a fine mesh strainer into a coupe.

1 1/2 fl oz Hayman's Old Tom Gin
1/2 fl oz Chinola passion fruit liqueur
3/4 fl oz Celery juice (freshly extracted)
1/2 fl oz Lime juice (freshly squeezed)
1/4 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
1 pinch Saffron fronds
3 drop Extra virgin olive oil
