Nonino operates five artisanal distilleries, each with 12 copper batch steam stills - 660 in all - and the family personally selects all the pomace used and oversees every distillation.
Slow maturation is equally important to the Nonino family with Grappa, ÙE, and fruit distillates aged naturally in barriques and small casks under seal and permanent Customs and Monopoly Agency supervision across seven warehouses. Every movement is logged in certified registers. Nonino has 2,734 casks made with oak from Nevers, Limousin, Grésigne and ex-sherry, along with acacia, wild cherry, ash, and pear wood.
All Nonino products are bottled at natural colour without the addition of caramel or other additives.
