Sons of farmers, Sion Edwards and Tom Warner met at Harper Adams Agricultural College in 1997 and after graduation harnessed ideas of producing essential oils such as lavender from their respective family farms. Initially they only considered gin production as a way of utilising the still required to produce the essential oils during the periods of the year when there were no lavender to distil.

The distillery is housed in a converted 200 year old barn on Tom's family farm (Falls Farm in Harrington, Northamptonshire) and uses water from spring just 300 meters away. Christened Curiosity after a cat left paw prints in the wet cement of the distillery floor (“curiosity killed the cat”), the bespoke Arnold Holstein still was first fired up in November 2012. It is a 500 litre copper pot with a 4.3m column housing eight bubble plates, a deflegmator and a patented catalyzer.
