This Northern Japan sake brewer (in Yamagata Prefecture) was established in 1741 and continues to use an ancient and very labour intensive style of sake brewing called Kimoto. Due to the time the sake is exposed to the air during the brewing processes, the sakes produced here tend to be rich, umami-infused and earthy.
