Tried this tonight as a while back my daughter gifted me three different sakes. As I don't read Japanese, although most likely pasteurized, I couldn't tell if they were indeed "namazake" (pasteurized) and thought I had better start drinking them! I used a Junmai Daiginjo which on its own was lovely. As I had an open Vidal ice wine this was what I used, but next time will try with a Riesling ice wine with its more forward stone fruit and honey profile as opposed to Vidal's more tropical fruit profile.
