My preferred five-to-one Dry Martini with a split base of gins, enriched with bianco vermouth and dried with a splash of fino sherry

This is a seriously good martini, so familiar and yet with the unfamiliar twists of extra sweetnes and aroma, and creamy mouthful of the Old Tom. The interplay of gins, vermouth and sherry is superb.

So I subbed genever for Old Tom and palo cortado for fino and cocktail onions for olives but otherwise all the same ! Tastes nice and dry and a little saline.
