For World Calvados Day I made my version of the Chimayo cocktail, to which I add half an ounce of locally produced apple brandy (Santa Fe Spirits) and 1.5 oz anejo tequila (Patron tonight), which I think pairs better with the apple brandy than silver tequila. The apple brandy ties the tequila to the fresh, cold-pressed Colorado apple cider now available here. Slainte!
