Best example of how there's sweetness and then there's sweetness. I typically drop sugar with cocktail recipes, but the maple flavour interacting with the rum sweetness is the star. Best balance for me is OFTD — enough Jamaica, Guyana, and ABV to structure without going full hogo, and gives the syrup something to push against. Sweetness is almost a side-effect.
