I've no idea! Sometimes I make a cocktail with a couple of ingredients and that can lead me to switch some of the other ingredients to make a new, completely different cocktail. Other times I start from scratch. Now nearly a year on, I can't remember what lead to the Kummel Ye Faithful.

It’s an intuitive skill, clearly. It would be great to hear more of how you put together new ideas, or the process of inspiration to final creation.

I don't use a process as such. I just use ingredients as they come to my mind, then I adjust to balance.
