I recommend Barr Hill Gin here. It is made with honey and complements the honey syrup and lemon very nicely.

Yes! One of our go to drinks. We up the fresh lime to 1 oz, and use a blend of margarita salt and Tajin pepper on the rim. We haven't tried with fresh squeezed grapefruit, opting instead for all GUS of Fever Tree Grapefruit soda. We omit the agave because we prefer our drinks sour and not sweet.
