Cervecería Minerva is a radical small Mexican brewery, which uses Hallertau noble hops from the German Hallertauer Region in its lagers
and East Kent Goldings from Washington State in its Stout and Pale Ale. The propagated yeast used in its lagers was apparently originally smuggled from a brewery in Yucatan, while the main malt used comes from the fertile valleys of the state of Puebla which lies between the Popocateptl and Iztaczihuatl volcanos. Other specialty malts are imported mainly from Wisconsin.
The water comes from a deep well and is exceptionally soft, contributing to Cerveza’s style. The water is filtered through Jal rocks from which the state of Jalisco takes its name.
