Review

Brought to us by the folks at the excellent Hide Bar in Bermondsey, this basement cocktail bar has a name that sounds more fitting for a firm of City lawyers, but refers to the bar's twin signature cocktails: the Demon, a suitably spirituous drink and the Wise, a lighter sour in style.

Each batch of Demon and Wise is different and the number of drinks left of each batch prominently displayed above a snooker score board on the back bar. At the time of writing the Wise being served (No.1) is a Brandy Crusta made with Chateau de Laubade No.5 Armagnac and the Demon (No.2) is a Ti Punch made with J.M. Martinique rum, tobacco liqueur and a lime twist theatrically served with the help of a brouilleur over a large ice ball. The other cocktails are also brilliantly executed classics or house creations such as the '27 Sling' made with vodka, Aperol, chamomile & violet syrup, lime and champagne.

A terracotta colour scheme with warm bronze and copper tones, including a copper-topped bar counter, make for a warm homely interior with booth seating giving groups of drinkers their own intimate space.
