Cocktails are the reason to head below. The list changes with the seasons and places flavour ahead of unnecessary embellishment, combining modern techniques with the foundations of classic cocktail making. Drinks tend toward fresh, lighter profiles, though those looking for something more spirit-forward are equally well catered for.

The relationship between HIDE and nearby Hedonism Wines also gives the bar access to an unusually deep collection of spirits. Alongside familiar bottlings are rare whiskies, old malts, unusual gins and other harder-to-find expressions, many available to taste without committing to a bottle. Classics can also be prepared using particularly special spirits from the collection.

Despite sitting beneath one of Mayfair's destination restaurants, Below works as a bar in its own right. You don't need dinner upstairs as an excuse to visit; settle into the low-lit basement for a couple of cocktails, and the considerable drinks selection provides plenty of reasons to stay.

Three private rooms – the Broken Room, Shadow Room and Reading Room – are also tucked away on this lower level.
