This craft cocktail bar in Valencia's Eixample is owned and run by Aleks and his wife Polina, with their partner Oleksii. One of the three owners is always behind the bar and ready to offer their hospitality.
They make almost everything themselves - the ice, the cordials, the syrups. They clarify and fat-wash, but barely garnish, saying, "We're after the flavour rather than the show."
Gato Negro is also known for its vinyl music and for hosting acclaimed guest bartenders.
