Sherry butts are often used for ageing whisky and this bar is definitely a good place for whisky lovers. Its hidden in an old street near Bastille and is reminiscent of cocktails bars in London's Shoreditch. Sherry Butt has two rooms: a sort of vintage living room, and a large lobby surrounded by club sofas.

The co-founder Amaury Guyot (who opened Dersou with a Japanese chef, a restaurant with food pairing and fusion food) has the ability to discover talented bartenders: Sullivan from the Syndicat, Simon Chollet (winner of Nikka Perfect Serve 2014) who has left to open a bar in Bordeaux, and now Javier, a young man who was taught mixology at the Experimental Cocktail Club School.

A dozen cocktails are chalked up on the wall. The house rules are: different alcohols for each cocktail; 11 homemade syrups; no infusion with spirits, but with aperitif as in Byrrh with cardamom or Grand Marnier with wakame and coco. Javier's leitmotiv is "Good, simple and well-balanced". Not to forget each cocktail's own embellishment: dehydrated fruits and bean sprouts, nori sheet, leaf of pandan, coffee bean... An interesting olfactory experiment!

But don't forget the Sherry Butt's main point: you can find about 100 whiskies (including rare ones such as Hanyu), from Scotland to America, France, Japan or Ireland.
