Open air fermentation takes place a little over an hour after the sugarcane has been pressed using natural yeasts in the sugar cane juice resulting in a grappe with a 4-6% alc./vol..

This is column distilled to produce a 60-70% alc./vol. distillate which is stored stainless steel vats for one year with the alcohol gradually reduced to bottling strength by hydration. Sealed with gold coloured wax covered cork stopper.

Appearance:

Crystal clear.

Aroma:

(hydrated to approx. 40%) Pungent agricole nose with a whiff of dungy farmyard with a touch of plump sultana.

Taste:

Dry cane slightly bitter palate with faint dry walnut, roasted horse chestnut flavours.

Aftertaste:

Dry slightly nutty finish.
