A Chilean Sparkling Wine from the Casablanca Valley to rival a good Champagne.

The Casablanca Valley is close to the Pacific Ocean, and its sandy loam soil is low in nutrients, resulting in low yields. Coastal breezes cool temperatures, slowing fruit ripening and producing grapes with tremendous flavour and aromas, particularly Chardonnay. The 80% Chardonnay and 20% Pinot Noir grapes used to make this wine are hand-picked and transported immediately from the Casablanca Valley to the Palmeras winery in the Colchagua Valley. They are refrigerated overnight and pressed the following day. Fermentation is with decanted, clean must. After fermentation, the wine is left on its fine lees and stirred weekly (battonage) to enhance complexity. The second bottle fermentation uses the traditional (Champagne-like) method (1-2 months), then the wine is left in contact with its lees for 6 months before disgorgement and dosage.

Appearance:

Pale yellow sparkling wine with persistent small bubbles.

Aroma:

Fruity, floral and subtly yeasty, with fresh pineapple, green apple, zesty pink grapefruit and toast.

Taste:

Medium-bodied with assertive cleansing acidity, a creamy mousse, and flavours of white grapefruit and green apple, along with biscuity or pastry notes.

Aftertaste:

Green apple shines on the biscuity finish.

Overall:

Classically made sparkling wine with New World vibrancy.
