Pronounced 'sant-oh-bann', a sugar plantation since 1819, but is a relative newcomer to rum production. St. Aubin make Mauritian agricole rums from the juice of freshly squeezed sugar cane. The fermented cane juice is distilled once only in an alembic still, and the rum is bottled without ageing.
