Amari Calamaro (literally Bitter Squid), also known as Amaro Degli Abissi is made with an infusion of honey, gentian and artichoke extract in neutral alcohol lightly sweetened with beet sugar to create a bittersweet liqueur, described as a Mediterranean-style aperitivo or digestivo.
Serve straight, chilled, or over ice with a slice of orange, or tall over ice with tonic water or cola.
Sampled on 13/06/2022
Faint haze, burnished coppery golden amber.
Pungent and herbal with gentian, zesty orange, peppermint and liquorice.
Honeyed palate. On the assertively bitter side of bittersweet with refreshing peppermint and deep rooty herbal tones.
Caramel, peppermint and deep rooty herbal tones.
As amari go, the wonderfully named Cala-Amaro is on the more intensely bitter side but this is balanced with a subtle honeyed flavour and mouthfeel. With its peppermint freshness and deep liquorice-led herbal complexity, this "Mediterraneo" amaro is a pleasing digestivo.
